When I am trying install accounting module there is no module choice for my preferred country - are there any ways to add countries?

In reference to Accounting, it sounds like you are looking for the "default currency" (preferred country). This can be found via Configuration>Settings then under the Accounting & Finance tab you will see an option for Default company currency. The options for USD and EUR should automatically be available, however others can be added from the create menu.
You will also want to configure your company data (found in the Chart of Accounts section of the Settings menu). Once you click this link, click the Configuration tab and change your currency to your desired default as well. From this section you can also verify whether or not you are using the anglo-saxon accounting model (via checkbox). I hope this answers your configuration question.
