I am trying to implement Odoo from the beginning of the calendar Year. It is now in February. I am getting error messages about items being out of sequence and that I have to change the journal entry number. I am terribly confused. Since it won't let me enter the item,. How do I change the nonexistent Journal entry number?

It could have better if you add the error message with the post. I hope you are getting the issue in invoice or vendor bills, it is mostly due to the date and invoice number issue.
If the issue is coming with the invoices in FEB, select the invoice in feb and do a re-sequencing and see it it resolves the issue.
If you are using Odoo 16, just ensure the module account_sequence is installed, it is expected to install automatically. Try those in staging/test db and once everything is okay, do the same in live db.
