what is the purpose of using a PosBox?
Can we just connect the hardware to Linux desktop who's connected to local server of Pos database ?

You can connect the hardware directly to the PC.
The PosBox allows a better infrastructure and peripherals work out of the box. As an example, you can use a tablet on its stand that connect through WiFi to the posbox that connects on an USB printer and scanner (tablets have no USB ports). Or you can use Odoo on the cloud for multiple shops rather than having a local/disconnected installation per cash register. If you want to print orders in the kitchen, no need for a PC: just a posbox and a printer.

As Fabien Sir's Answer, you can use the POSBOX in live instance also, by this way you can use all features of POSBOX from the live site.
Example:
Your sales person can take a pos order from the customer house directly and receipt will print from the location of POSBOX and when delivery boy come to customer location they can carry that receipt and deliver their goods..
