Found product "Status" under the "inventory" tab when creating/editing a product. It has default status' of "In Development", "Normal", "End of Lifecycle", or Obsolete". Do these have built-in functionality or are they just for internal reference?

If the states are anything but "Normal" I do not believe the product can be added to an order line.
That functionality might not still work. But the purpose is to prevent products from being offered for sale that should not be sold, while keeping a record of past sales.
