I'm looking at using Odoo for my small business and would really like to integrate Stripe for accepting payments on einvoices.

If you are computer suave odoo v8 now has the ability to integrate payment providers. In opendays it was suggested that adding a new provider is a 30 minute development effort. You may want to check out the paypal module or wait for someone else to develop this payment option.
