How I can customize checkout process in eCommerce module?
1. I want create 2 way of payment and both are offline payment.
2. Or I want skip payment and them emailing customers.
Please tell me how to do it?

Hi Vasiliy!
See Settings -> Payments -> Payment Acquirers.
Now duplicate Wire Transfer, duplicate it's QWEB template, change name to Nalichka :-)
Wire Transfer is offline payment, and payment type gets into order so you can see what customer selected on checkout.
