I can see how to setup a visit as a Task, but what if I want to repeat the visit every month?

New at Version 14, the option to do this is in the Configuration --> Settings Menu.
Search for Recurring Tasks
Now, when you plan a Task or Visit, you will see a Recurrent checkbox:
When you check this ON, you will now see a Recurrence tab on the Task:
Manage the repeating visits from this tab.

So exactly when those planned (recurring) tasks are created? Why I don't see them in my Gant/calendar views or a a new tasks in projects?
Future visits are not created until the day they are scheduled. If you need planning time, subtract this time from the scheduled date. If you need a week to plan, schedule the future task a week earlier than needed.
Just adding to Ray's comment, you need to ensure the Scheduled Action is activated in your system, otherwise it won't be created.
Developer Mode Activated > Settings > Technical > Scheduled Actions > search "Project: Create Recurring Tasks". Turn it on if it is off.
