I just started adding UML diagrams to my little OpenERP documentation project. It is still a work-in-progress, but it might be useful to you. Here is a sample diagram snapshot for Account Invoice UML:

Alternative to Mandibule : pyNsource (exists for various plateforms)
Can you get pyNsource to recognize OpenERP models properly (ie: showing more than just the method names - say with attributes at least?)
