Microsoft Copilot is not supported - and based on some side notes from the OXP, currently not planned.
You can choose between OpenAI / ChatGPT and Google's Gemini.

Odoo v19 does not natively integrate Microsoft Copilot; its AI features mainly support Google Gemini and OpenAI GPT models. Microsoft Copilot can be connected to Odoo via third-party tools like CData Connect AI, enabling access to live Odoo data. Additionally, third-party modules such as “Odoo Copilot” offer GPT-based AI capabilities for tasks like customer service, content generation, and workflow automation.
