My team and I are working on providing Odoo as a SaaS to our customers and we are wondering whether or not we can embed Add-ons that we already purchased to the application before we sell it? And if there's any official documents/ links in this regard.

Please read the license agreements of the corresponding addons. Usually, this is not possible and you should buy a license for each of your customers using such an addon.
