If I delete my database and create another one will I lose all my paid apps?

no, you don't lose any paid apps because the app is source code, when you will create a new database it will use the same source code
Note: user will lose all the data/record (like partner, invoice, payment, etc )which created manually after installing the app
Just tried and it came back with this error
You cannot drop a paid database!
