I'm using Odoo online with my own domain name (my.domain.com).
Everything is working well.
I'm starting to use Helpdesk in Odoo, but I'd like to modify the domain name of the alias to xxx@domain.com instead of xxx@mycompany.odoo.com.
How can I do it?

You can do that from settings > General setting > Alias Domain in the the discuss section

Which version are you using?
Yes, you need to click custom email server to view this field. The screenshot below is V16.2.
Also, you would need to configure incoming email server if you wish to create tickets from incoming emails to your custom alias
