For serialized items, during order delivery is there a way to have Odoo allocate
the inventory to open order but not the serial number to the item. Then let the
user assign the serial number when they pack the shipment.

By default, during delivery Odoo assigns serial numbers to items in open orders.
This means the user has to search through a stack of items to find the
correct serial number item. In our case we may have 100 orders for the same item going

out .. so the user would have to sift through a pile of 100 items to find the correct serial num

with the default scheme.

Go to Inventory > Configuration > Operations Types > Delivery Orders

You can change the Reservation method to 'Manually'. This means that Odoo will not automatically assign serial numbers upon confirmation. They will need to be manually assigned.
