When adapting my email templates, I would like to know if these changes are kept or lost when doing a base upgrade or Odoo update or Odoo upgrade

When you are in developer mode you can find an action "View Metadata" in the bug menu. If you click on it in the email template, you'll see the "no update" status. If it's True this template won't be overwritten when you do an upgrade (in V15 you can change directly this value if you want).
This applies to ALL records in Odoo. If the View or Window Action or Menu or anything else you want to edit has the no update status set to True, your changes will not be overridden during an update or upgrade.
