I am not sure to understand your question, but if you want to keep track of products assigned to employee, we use the warehouse management module with one location per employee and we move serialized products (laptop, screen, IP phone) to (or from) the employee's location.

If you need track spare parts for assets then you can use module Asset, that support asset location.
