We sell apparel, and we currently have an ERP that allows us to create a manufacturing order and pick the style, and then detail the variants (color, size). However, in Odoo, it feels like I have to create a unique MO for each variant.

Thank you for the quick responses. However, these only detail exactly what my problem is. I have a shirt style with, let's say, 10 variants (5 sizes, 2 colors). My problem with Odoo is that I need a separate Manufacturing Order for each variant. With our current ERP, the Manufacturing Order only specifies style, and then I can pick and chose wihch sizes and colors to add to that Order. Can I do the same with Odoo? It seems like I can't

You do need a separate Manufacturing Order for each Variant. If you are talking about a Sales Order (to sell apparel) or a Purchase Order (to buy apparel) then you can enter all combinations of colors and sizes on a single order. I have edited my answer to show this. Creating a Sales Order for dozens of different combinations of colors and sizes will create all the Manufacturing Orders for you automatically based on the Bills of Materials. You don't have to create a separate Manufacturing Order yourself, Odoo will do this for you.

A Manufacturing Order in Odoo can only make one Product.*

A Bill of Materials in Odoo can describe the components for as many things as you want by using something we call Product Variants.

You can setup a Product with Product Variants such as:

You can then create a Bill of Materials such as:

A single Bill of Materials that applies each Component to one or more Variants. You can also manage a single Bill of Materials per Product Variant where necessary.

Automatic re-ordering rules can schedule Manufacturing Orders for you, as can any Sales Orders you enter or you can use the Master Procurement Scheduler to plan for a known demand at a time.

Each Product Variant demanded will trigger a Manufacturing Order that knows which components should be used during production:

A Manufacturing Order for a single Basic T-Shirt that has Odoo Purple and Large as the Product Variant Attributes.

You add T-Shirts you sell to Sales Orders like this:

You can also add them like this to Sales Orders AND Purchase Orders (when you buy apparel):

On e-Commerce, Product Variants look like this:
