I have 2 questions:
1) Edit the subject by sending email to a customer from Odoo. (example image: https://ibb.co/wwRYNS3 )
2) Is it possible to have different email templates here?

Hi ,
Yes you can change both of them by clicking on full composer its arrow like field you can click it and it will pop up a form it will ask customer's info and when you 'll click save to that form another form will come up having subject and template field.
