I'm having love/hate on learning Odoo development at the same time learning onboarding studio is much easier, but I'm just curious since they do the same thing right? correct me if I'm wrong.
What is the main of the two aside from coding?

Yes, Odoo Studio provides a simplified way of creating extension views, which can also be achieved by development. It also lets you add fields to Models (database tables) or create new fields.
The biggest limitation is that you can't add or modify Python code, though Automated Actions let you add some business logic, and this can utilize Python. These are currently not part of Odoo Studio.
