With Developer Mode activated, Settings --> Technical --> Security --> Access Controls List is where you can quickly modify delete permissions.

If you really want to disable delete on everything it may be quicker to export/import the list.

Please think about each model you want to revoke permission for - I can't imagine users will understand why they can't delete an event from their own calendar that they created.
