I would like to upgrade my odoo from version 16.0 to 16.X
but I can't find any tutorial or explicit explanation on this subject
can you help me how to proceed step by step

Hello,
I believe they only release major versions for Odoo.sh and On-Premise. You can try upgrading, but they may push you towards v17.
