I have added 2 sessions for test purposes but I don't seem to be able to delete them.
I have already entered all my products so I don't want to start of over from scratch!

you must close the sessions, which in turn will post the accounting entries.
Then sessions can not be deleted for security and regulatory rulings.
You can create Pos order returns to cancel the initial test transactions
