Hello.. can i change the business process of openerp without creating a model or programming?? for example : making 3 levels of approval on a leave request. another example is making only the manager allocate and create an expense category for a specific employee? thanks in advance..

I think you need to see the low level objects. You need to create a work flow, or modify it if has. For the possibilities of the category create you need to check the modul security. Not so easy, what you want. Very painfully play without programming :-)
