In V6 it was possible, on the GTK client, to do a right clic on a one2many relation, such as suppliers for a product, and to set a default value. With V7 in debug mode, one2many relations seems not be displayed by the 'Set default' menu. Any mistakes, work around or a 'lost' features ?

The possibility to set a default values with a right click of the mouse is a lost feature.
Yes, but the possibility to set a default value to a one2many relation should have been moved into the 'Set Defaults' menu.
