I have to set up a campaign with an email activity to the customer who orders a certain product type.
The target model to select for the campaign are the leads or the orders? Or others?

There are a few variables to your question, but if you would like to send an email to customers who ordered a certain product, you could Target: Sales Order and then Filter by: Order Lines -> Product -> Name -> contains.
