Or may be use a list view instead of grid view in POS?

You can use this module https://apps.odoo.com/apps/modules/17.0/pos_full_product_name/
This inline stylesheet will make POS category images smaller to get bigger space for product selection panel.
This editing of default View will be overridden by updates.
In debug mode go to
Settings -> Technical -> User Interface -> View.
Search for POS Index view

or you can add hover css . (while hover on product. show full product name in tooltip)
