I am still using odoo10 and have major performance problems. I see that AuditLog plugin is installed and activated and monitors all operations. Over 1 million entries now. Question: Can I simply uninstall this plugin once (with the effect of having no logs) or deactivate all logs without endangering the system? And would that possibly fix the performance issues? For individual actions such as confirm order or in the warehouse area, it takes several seconds to minutes.

I believe uninstalling the module should be fine for you, as it will remove all those records from db as well as stop the behaviour.
Take a backup of current db and restore it in a test or staging instance and trigger the uninstall of the module and see how it goes, If everything goes smooth, you can apply the same with live db also.
