¿Ya es posible hacer este upgrade?
Me indica esto:
"Upgrading to version saas-17.1 is for testing purposes only. It is not yet possible to upgrade in production for that version."

Hi,
That message means the upgrade to saas-17.1 is currently limited to testing environments only.
Odoo hasn’t yet released the official production upgrade path for that version.
You can still run the upgrade on a test or staging database to identify possible issues in advance.
It’s recommended to wait for the production upgrade announcement before applying it to your live instance.
Keep your database backed up and monitor the Odoo.sh “Upgrade” tab for when production upgrades become available.
In short - yes, you can test now, but do not upgrade your production environment yet.
