WIll answer in English and please translate! There is no such manual. Process may be very different depending on what you are using currently and your version. Roughly your project may look as follow:

1. Move from Odoo Online or Odoo.sh to OnPremise
2. Uninstall the enterprise modules (not advisable and not supported officially)
3. Re-configure and analyze the errors (try fixing them or report here)
4. You may miss some functionalities and potentially you can find cheap or free alternatives in apps.odoo.com

Highly recommend to finding an experienced consultant to help you with this.

I would recommend this scenario, but again you will need a partner/consultant: 

1. Reduce the number of users to the minimum and keep your subscription
2. Create your community installation and setup whatever is possible the same way as your enterprise
3. Import master data
4. Find solutions for missing functionalities

Above in practice will be a new implementation!

Going from Community to Enterprise is again project itself and its complexity may depend on what is implemented.

If possible focus on growing and keeping your business than saving from licenses, which might not be so nice experience.
