My company doesn't use sales orders. It seems like a redundant step for our business because if it's not is stock, we don't sell it.

We either make an invoice or a quote. If a quote is approved, a matching invoice can be created. If it is rejected, then it's status is marked rejected and it is closed.

Is it possible to use Odoo and not use Sales Orders, just Quotes and Invoices?

We don't use orders because we are a small brick and mortar that sells things to people that come to our store. That is extra documents and extra steps that my employees don't need. Regardless, this is how we run our business. To be clear, you're telling me that Odoo can't run without using sale orders. So, if a customer comes into our store and says, "I'd like to buy this widget." My employees have to create a sales order ( even though nothing is being ordered and it is a useless document that will be ignored ), then create an invoice. That is extra clicks, extra processing time, extra documents to confuse a very simple transaction. It seems insane to me that I can't customize my workflow in this way. Thanks for clearing this up for me.

Michael - do you know that a Quotation is a Sales Order? It is just a "draft" order. Also we have a Point of Sales App for in store sales that works just like when you visit the supermarket - you present your item and the employee scans or enters the product(s) and you pay. Maybe that's what you are looking for?

Of course, you need to create an order - this is the basis for everything! For the life of me, I can't imagine how you would run an ERP system without orders.
What you don't have to do, of course, is send an order confirmation to the customer every time. If you don't do that, it only takes a few clicks to go from quote to delivery/invoice.
