The message_post method is not available on the stock.move object by default.

the steps i do are:

• Settings --> Technical --> Email --> Templates

In Name: "Scarico Parti" Applies to: stock move

then i click on ADD Context Action.

When i go on Warehouse --> Stock Moves and select one move, then i see MORE Button and under this i see "Send Mail (Scarico Parti)... when i click on it i see the wizard with recipients/subject and message, then i click on SEND and i see the error.

This error will be generated if you will enter the 'model' name explicitly in the wizard otherwise it will take the value of 'model' name from the current object and works well.
