Hi guys, so far I understand you can only adjust the inventory quantity and valuation via an inventory adjustment within the inventory module. The adjustment specifies on that particular inventory, and creates a journal entry for it as well. My question is, is there a way to just create a journal entry that adjusts the inventory valuation and quantity without having to do an inventory adjustment through the inventory module? I'm on enterprise edition v15.

No, this isn't how Odoo works.
There are two sources of Inventory information in Odoo.
1. What happens in the Warehouse - what is received, delivered, lost and found through cycle counts, etc.
2. What happens in Accounting - what is purchase and paid for, sold and charged for, written off, etc.
You have seen that Odoo will generate the "what happens in Accounting" for you when you tell it "what happens in the Warehouse" (when you do an adjustment) but it won't do it the other way around.
The Inventory Report in the Inventory App is what is commonly called a "sub ledger". You need to reconcile (match) this report with your Balance Sheet report (based on the Journal Entries) from time to time - probably monthly - so that you can manage any mismatches (where what happened in the Warehouse was not reflected in Accounting or vice versa).
