I already know that Odoo does not have the feature to show th available stock neither to restrict a sale from the website when a product is not available, however I would like to know if someone has any idea to create a rule or something to unpublish the product when the quantity available is zero.

You create own module with Cron Job - ir.cron. In cron you test a quantity and unpublish/publish product if needed.
