is it possible to customize coupon codes in Odoo 8 to be usable just once or only by a specific person?

Anika,
Yes it is possible, we can have separate view where we can set the redeem limit. if we will set 1 over there we can only redeem this coupon once.
Also we can keep this information inside customer form, so only alloted customer can use this coupon.
You have to add up customization to reach your requirements.
