So sending a mail to a third person without sending to the vustomer

Believe it is possible from the log note section to email specific contact without sharing with followers (customer in your case) of the document. By using '@' a specific contact can be tagged in the message
However an email reply to message from contact would be shared with all followers.
I would test this before implementing.
