How to switch on the multi-tenant feature that Odoo uses in its cloud? say if we want to run 10 different companies on one server with totally separate and secure data.

The SaaS version of Odoo 8 (which is not (yet) publicly available) is not true multi-tenant. Each company has its own database. For that purpose only you do not need the SaaS version.
