Studio only offers the possibility to add apps clicking "New App" on the dashboard (web#home). How can I delete this custom apps?

After deleting Menues as @Fabrice said, you can also go to Settings/Technical/Views, search the views, delete them, and then go to "Models" and delete the models.
First, you have to remove actions and operations, which you created in the custom module. rest of the procedure is the same as explained above by @Ing.Daniel_Blanco and @Fabrice.
If you do not remove your actions then its not work properly.
If your question is "How to remove the icon from the App Switcher", then you can do so in Settings/Technical/User Interface/Menu items. There you can find and delete the menu item (ie. icon). This will only delete the menu item; it will not delete the models, fields, views,... that you have created in it.

But, exist any way for delete all the changes in odoo studio ? because the curious customer made a big problem.
