Is there a way to have a single Product with multiple variants and still have unique pricing for each?
For example, say the product is "Service Contract", Bronze 1 Year is $59, 2 Year $99, 3 Year $139. Silver 1 Year $99, 2 Year $179, 3 Year $259, Gold 1 year is $149, 2 Year $279, 3 Year $409.
For now, I have 3 products (Bronze, Silver, Gold) and then 1 Variant (1 Year 2 Year, 3 Year), but I would really like to just have 1 product as this comes up a lot.

Follow the below steps and you can achieve your requirements :-
Create a product Service Contract
Now under VARIANTS on the product form page, create Attribute and Product Attribute Value( Refer Screen shot 1 )
Attribute Product Attribute Value
TYPE Gold,Silver,Bronze
YEAR 1Yr, 2 Yr, 3Yr

3) Now you can check it by clicking on LIST OF VARIANTS( Refer Screen shot 2 )

Hence you can have a single Product with multiple variants and still have unique pricing for each

The extra price is by variante, so you cannot create 2 variante : # year and grade...
The easy way is to create 1 variant Type:
With 9 values : Gold 1year, Gold 2year, Gold 3year, Silver 1year, ...
