I guess what I am doing is using the framework and developing my own module on that, so that I don't have to pay.

Is that recommended or possible? Are there any walkthroughs for using just the framework and developing on top of that?

Any help would be greatly appreciated!

Start with the developer documentation at https://doc.odoo.com/contribute/05_developing_modules/

Only the SERVICE of one-click installation of modules is not available for more than 3 users without a subscription.

I have seen at least half a dozen questions on this forum explaining this, and how to install modules without using the one-click installation service.    You should be able to find them easily.

Note that all the modules from odoo are free and most community modules are also free.

Take a look at odoo's OpenDay Day 1 Presentations

1:58:20 [slides] Odoo v8: The framework reborn – Antony Lesuisse
3:17:20 [slides] Developing V8 frontend modules – Xavier Morel
5:47:45 [slides] Developing V8 backend modules – Raphael Collet
9:17:30 [slides] Development environments in 5 mins. – Laurent Mignon

OpenDay Day 2 Presentations

3:38:52 [slides] Odoo online platform architecture – Olivier Dony
5:10:11 [slides] From V7 to V8: the new API – Raphael Collet
8:27:20 [slides] The v8 reporting engine (HTML/Qweb) – Simon Lejeune

Does anyone have fragments of the video?

Not that I have seen, but you could do it for the community! :D

I mean for more than 3 users

if you are going to install your own modules then you have to host odoo yourself, and if you do that then you don't have to pay odoo anything. You just don't get major upgrades as a free service. Odoo is free if you are willing to do the work yourself.

Sorry, what do you mean by install my own modules? Do you mean to develop my own module? Because I'm having a bit of trouble finding a good tutorial or guide on how to develop my own module on top of the OpenERP framework. Thanks

You said you want to develop your own modules/code. Odoo does not allow non-odoo source code to be installed on their saas servers. So if you want to do anything custom you need to host/install odoo yourself to have the control you wish. As stated before you don't get major version upgrade service (conversion of the database schema from one major version to another). And the second thing is the 1-click module install as stated by Ray Carnes above.
