Do I have to pay every month to benefit of On-Permise

I want to create a customer and service manager for a customer. I recently discovered Odoo. Due to the characteristics, the server will and must be hosted locally.
The questions is the following :
if I pay the subscription the time of the configuration and the deployment. Would I need to continue to pay for the customer to benefit from the subscription. Knowing that EVERYTHING will be local.  Could I just pay the subscription punctually to have the latest update and bug fix.  Will this have an i

Yes, you have to pay every month.
Odoo Enterprise is licensed via a subscription model - you cannot use it without continuing to pay the subscription fee - no matter if we host (Odoo Online or Odoo.sh) [1]  or you host (Odoo On Premise).
Once you stop paying for Odoo, you must stop using it, you can review the full agreement that is required with each subscription at  https://www.odoo.com/documentation/16.0/legal/terms/enterprise.html [2]
