Can I connect Odoo 12 to Excel so I can query live data. I would like to be able to access live data for reports and determine parts available for Manufacturing Orders.

Not sure what you are trying to achieve. Every models in odoo is saved as tables in postgres.
For eg, manufacturing orders are saved in table mrp_production
