Currently, I'm delving into the realms of 'Pronto' and 'Odoo' as potential ERP solutions for manufacturing operations.

I do not know Pronto. But I worked with Odoo 5 years for a manufaturing company after 20 years with SAP/R3 in a large manufacturing company.
Good about Odoo:
User interface for work order confirmation  Production instructions for operators
Integration with Quality Management Integration with PLM Traceability
What I miss:
Better functionality for process manufacturing. Odoo process is based on discrete manufacturing. Start up scrap / tear down scrap.
More advanced planning and MRP. ( ATP calculat
