I saw Odoo Helpdesk, I currently use Odoo Community Edition, dockerized on the cloud. We did this to save cost. The startup model does not justify hundreds of dollars for an ERP systems, either go with Spreadsheet or use the Community Edition.
I am interested to use Odoo Helpdesk Enterprise Edition, Is there a way for us to use just one part of Odoo Enterprise Edition, and use everything else with Odoo Community Edition?

You can't pay just for one of the enterprise modules, if you decide to go enterprise you need to pay for all the ones you are using.

I'm sure there should be other alternatives not listed there, but I'm not aware of them.

I understand. We're deep in Odoo CE 13.0 , I've searched online and it seems there is no option yet to downgrade.
What modules are mission critical for you in Odoo 13.0 CE?

May I know why you ask this?
@Jason Invoicing is part of CE, accounting is EE only, but OCA with the MIS Builder and its additional accounting modules should cover you, Website is CE also. So no need for EE.
I see, I do use Accounting CE from OCA, they're a great repository.
No, there is no such option.
But you can start with Odoo 12.0 CE with the OCA modules (https://www.odoo-community.org/)and you should have enough coverage.
