Is there any way to skip the Manufacturing/Production module and track only the inventory and products?
For Example: Raw Mats A + B + C = D I just wanted to track the inventory of A,B,C,and D.
How do I subtract A,B,C and add D to my system?

You always need the MRP module for that. But when you define the BOM (Bill of materials) as a 'phantom' (Set) it will work without creating a production order.
