Changing the stock valuation from Standard price to FIFO will affect how Odoo calculates the cost of goods sold and inventory valuation going forward. Existing stock will still be valued at the old cost method, but all new incoming stock will follow FIFO rules.
In Odoo 17 Community, you can update this by editing the product category and changing the costing method to FIFO. To avoid inconsistencies, it’s best to make the change at the start of a new period, after reconciling inventory and accounting, and ideally when stock levels are minimal. This way, the impact is clean and easier to track.
Also, note that in Community Edition, valuation is manual (no automated accounting entries), so you won’t affect other modules directly — but make sure your reports and manual entries match the new method from the date of change.
