If I have a fixed asset that I have partially depreciated in Odoo and now want to sell part of it (not all of it), what is the best way to do this?

Do the same thing that you would do if you sell the asset completely, with a loss. Instead of expensing the loss, book the same amount back to the fixed asset account then create another asset for the remaining amount.
Find the Journal Item that is debiting the Fixed Asset account and from the Action Menu select Create Asset.
You can then choose the Asset Model and verify the depreciation entries for the remaining value of the Asset you didn't sell.
