Is there a way to create an "order guide" with what the customer is currently ordering, on a continual basis, which would allow the salesmen to adjust just quantities needed or could add additional products if the customer desired? Or is this a custom module that needs to be created?

Assuming you are on v8 or later, you probably want to use Quotation Templates.
A quotation template is a template that can be used when creating a quotation. It will pre-populate the order lines of the draft quotation as well as suggest extra products. The salesperson can then add/remove lines as well as edit quantities, or add suggested products. The salesperson can then confirm the order.
Quotation Templates are in Sales > Configuration > Quotation Templates. There is also a field on the quotation where you can specify the one you want to use, or create one from there immediately.
