Creating BoMs on the fly for product variants - Odoo 12

I am relatively certain that this is not possible at the moment - unless there is an app that does it - so this is more a suggestion for something that would be nice to have.
When using product variants, where the variants are only created when they are added to a sales order, the variant will be created without having a BoM.
It would be really practical if the Attribute Values could be tied to specific components/product templates, so that when a variant is created, it also creates a Bo

I understand your point here, but the main use for the variant is to have different specifications for the same product to minimize the count of products in the warehouse. creating a variant only adds a simple cost for the product, without altering other products in the process.
If you used variant as products then it will be many to many relations and will cause difficulties to handle later on.
Use KIT instead, it will do just want you to need easily without BOM
