Is one of my co-workers able to create a project and to hide it from anyone who is not invited to join?
I've tried setting the project on invite only, yet collegues can see the project and open it.

Take into account that the rule 'Invitation only' doesn't work for project managers, only for project users. Besides, check that those colleagues are not subscribed for a project.
In order make the rule work for project managers you should change the security rule in the developer mode go to Settings > Technical > Security > Record Rules. Find here:
Project/Task: employees: follow required for follower-only projects
Project/Task: project manager: see all
You can make the second the same as the first. So, project manager would have full rights for all projects.
Take into account that it might restrict user rights for other objects also (e.g. stages). Thus, it is better to make your colleagues just project users instead of re-defining the groups.
