Why have the calendar in odoo employees date of birth starting from 2005 and not 1900?
How can someone how is older then 10 years, giv ehis birthdate in ?

That is a behavior of the widget datetime used. You still could select 2005 and clic again to select the year and you will see 1995 to select it, clic again after and you will see 1985. Strange, isn't it?
find this file:
addons\web\static\lib\jquery.ui\js\jquery-ui-1.9.1.custom.js
on the line of 6492, find:
"c-10:c+10", change the 10 to the year you want to reduce and increase
