How can I add the field "Lot / Serial Number" for each item of the Invoice document?
I'm not sure if it's possible from Studio, and if with a "Related Field"

Already available with v13 and v14:
It's an Odoo setting, not a field that should be added in studio, as Ray answered.
BTW, you can use the Ventor app to manage serial numbers in your Odoo inventory
